I’m not sure, if this is asked before: If i add one or more category to a page (not Blog), they will not be counted and used by the categories menu in the sidebar. What is the intention behind this?
In my case, it would be useful to categorize pages.

Yes, the categories menu on the sidebar are for blog entries only.
We would have to create another widget to do the same for pages. The problem is that there is no visualizer for filtering taxonomies on pages just yet, but it could be modeled at the search level.
