I was thinking that a nice enhancement to the Media Manager would be the ability to configure the asset repository location through a site setting, or possibly on a per asset basis. i.e instead of storing the assets on the file system where contentbox resides, leverage the coldbox-amazon S3 storage module (or akamai for that matter) to store the assets in the cloud. Thoughts?

This already is done. Go to Settings > Media Manager
You can configure everything about the media manager there.
